Mini Lemon Cakes

Have you ever thought something was cute, and edible? Madison came home and said "Mom, Jan Stevens made THE BEST little lemon cupcakes and you've just gotta make these!"

After a phone call and 3 tries at it, I now can make them without spilling over the top of the muffin tin.
(I'm not a baker. Just an eater.)
I put sprinkles and trix cereal on the top (because I'm an over-achiever)  for more color.

Try them with your kids- they'll love em!

1 Lemoon Cake Mix
1 instant box of lemon pudding
4 eggs
3/4 c oil
Mix

Take a spoon and put one Tablespoon  into Pam sprayed mini cupcake tins.
Bake at 350 degrees for about 12 minutes.

Frosting:
4 cups powedered sugar
1/3 c lemon juice
zest of one lemon-- If you don't have it that's ok. I didn't either
3 T oil
3 T water

Mix and dip the tops of the cupcakes into the frosting. Or dip your fingers. Whichever tastes better.

Wasn't that easy?
